Roasted Vegetable Gnocchi

Fancy a dish that takes 10 minutes and is packed full of flavour? Say hello to this quick Roasted Vegetable Gnocchi recipe! Simple, tasty and cheap to make, this Italian dish can be a great meal for one, or doubled up.

Ingredients

  • 200 grams fresh gnocchi
  • 100 grams sliced mixed vegetables I used courgette, aubergine, red onion, whole cherry tomatoes and red and yellow bell peppers.
  • 1 clove of garlic
  • 150 grams tinned chopped tomatoes
  • 1 teaspoon tomato purée
  • 1 sprinkle dried parsley

Instructions

  • Add some water to a small pan and bring to the boil.
  • In a separate pan, add the mixed vegetables and heat through.
  • Add the crushed garlic, chopped tomatoes and tomato purée.
  • Add the gnocchi to the water and cook through. Check the packet instructions, but usually this only takes around 2 minutes.
  • When cooked, add the gnocchi to the vegetable mix and heat through.
  • Plate up, sprinkle some dried parsley on top and enjoy!

Top Tip:

  • To save even more time, grab a bag of frozen roasted Mediterranean vegetables that can be added straight to a pan.
