Ingredients
200gramsfresh gnocchi
100gramssliced mixed vegetablesI used courgette, aubergine, red onion, whole cherry tomatoes and red and yellow bell peppers.
1cloveof garlic
150gramstinned chopped tomatoes
1teaspoontomato purée
1sprinkledried parsley
Instructions
Add some water to a small pan and bring to the boil.
In a separate pan, add the mixed vegetables and heat through.
Add the crushed garlic, chopped tomatoes and tomato purée.
Add the gnocchi to the water and cook through. Check the packet instructions, but usually this only takes around 2 minutes.
When cooked, add the gnocchi to the vegetable mix and heat through.
Plate up, sprinkle some dried parsley on top and enjoy!
Top Tip:
To save even more time, grab a bag of frozen roasted Mediterranean vegetables that can be added straight to a pan.
