I am ALWAYS looking for ways to cut corners in my morning routine. I have to leave the house just after 7am every morning for work, so having a pre-made breakfast that’s healthy, cheap and still has tonnes of flavour is perfect to grab and go!
For years I’ve seen overnight oat recipes but always thought I wouldn’t like the texture. But after months of scrambled eggs or Shredded Wheat for breakfast, I thought it was about time to add something new in my diet. This Key Lime Cheesecake Overnight Oats recipe is one I have created after trialling out a number of flavours based on staple ingredients I have in the kitchen. I wanted to share a quick, easy and simple recipe that shouldn’t take a long time to make, or break the bank!
I like to make this recipe the night before, and then eat at my desk at work as it keeps me fuller for longer than other breakfasts – perfect for those days filled with back to back meetings!
Key Lime Cheesecake Overnight Oats
Ingredients
- 30 grams rolled oats
- 180 ml semi-skimmed milk or alternative milk such as soya, almond or oat milk
- 80 grams Greek yogurt
- 1 tablespoon chia seeds
- 1/4 teaspoon honey
- Zest and juice 1 key lime
Instructions
- Mix all of the ingredients together into a jar with a tight fitting lid.
- Leave in the fridge for a minimum of 4 hours or overnight – grab and go!
