Winter is fast approaching and is there anything more cosy than settling down with a hot, steaming bowl of homemade soup? I love finding ways of using up leftover veggies and adding red lentils is a great way of adding more protein in your diet. I first found this recipe on the One You Meals app when I was looking for a quick soup recipe to make. In this version, I have left out a couple of additional ingredients and slightly amended the amounts. This homemade red lentil soup recipe only takes half hour to make, it’s really easy to make and is great for sticking to a low budget. I hope you enjoy it!
Homemade Red Lentil Soup

Ingredients
- 1 brown onion
- 2 carrots
- 1 red pepper
- 750 ml vegetable stock
- 50 grams dried red lentils
- 1/2 teaspoon ground ginger
- Fresh basil
Instructions
- Slice up the carrots and chop the onion. Add to a large pan and cook on a medium heat.
- De-seed the red pepper, slice into chunks and add to the pan.
- Add the vegetable stock and dried red lentils to the pan and stir to mix well.
- Add half a teaspoon of ground ginger and stir.
- Cook on a low to medium heat for about 20 minutes until the vegetables are nice and soft.
- Use a hand-held blender to blend larger chunks of vegetables.
- Top with fresh basil.
- Serve with a warm crusty bread roll and enjoy!
Top Tip:
- If you don’t have a hand-held blender, when preparing the vegetables, chop them up into smaller pieces.
