While it is possible to eat enough protein through a healthy, balanced diet, sometimes it can be quite a challenge to make sure we’re eating enough for what we need to support our fitness goals. A lot of influencers in the fitness world tend to push eating processed bars and protein shakes. But I want to show you that it is possible to eat enough protein without too many chemicals. This chocolate protein pancakes recipe will increase your protein intake, and tastes delicious!

A lot of protein bars have that awful, dry protein taste. They’re sold as delicious bars packed full of flavour and ‘goodness;, but the reality is often they’re dense, powdery and feel heavily processed. I’m also not a fan of having protein powder mixed in with water, either, so I decided to find other ways to get in the protein I need.

Chocolate Protein Pancakes

Whether you’re making these protein pancakes for one or for a group of people, you can add whatever toppings you’d like. For a black forest gateau twist, you could try adding cherries, dark chocolate shavings and thick creamy yoghurt on top.

Prep Time: 2 minutes

Cook Time: 20 minutes

Servings: 1 person

Ingredients:

  • 1 teaspoon of coconut oil
  • 60 grams of oats
  • 2 eggs
  • 1 sliced banana
  • 1 tablespoon of chocolate protein powder
  • 1 teaspoon of baking powder
  • 2–3 tablespoons of Greek yoghurt
  • 1 handful crushed nuts or granola mix
  • 1 tablespoon of dark chocolate to shave on top

Method:

  1. Blend the oats, cracked eggs, banana, protein powder and baking powder until a consistent smooth texture.
  2. Heat the coconut oil in a non-stick frying pan on a medium heat.
  3. Pour about a quarter of the mixture into the hot pan.
  4. Cook on one side for about 30–60 seconds, or until golden brown (there’s a fine line between burning the mixture!)
  5. Using a spatula, flip the pancake over and cook the other side.
  6. Remove from the pan and add to a plat once both sides are nice and golden.
  7. Repeat until you have four pancakes plated up.
  8. Now for your toppings! Pour over the Greek yoghurt, crushed nuts or granola and shave over some dark chocolate curls.
